Onion soup (vegetarian, vegan version available) This is the soup that guests come back for. The secret of this soup is time; our time. The onions are very, very slowly fried until they have the right color and sweetness and are finished with a broth before serving. Split pea soup This is a typical winter soup which also tastes great outside the winter. We serve the Dutch version (called “Snert”) which takes 2 days to prepare and needs to rest for another day. Day 1 is to make the broth of various pieces of pork, on day 2 the peas and other vegetables are added and when the soup is ready we let it rest for a day to thicken and let it come to taste. This is the soup that is served on new year's day as a comforting prize when thousands of Dutch people take a swim in the ice cold North Sea.
